Ingredients

  • 6 eggs, at room temperature
  • 1/2 teaspoon cream of tartar
  • 1 cup superfine sugar
  • 1/4 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 1/4 cup powdered sugar
  • 1/2 cup heavy whipping cream
  • hot water
  • rum
  • nutmeg for garnish

Instructions

  1. Separate the eggs.
  2. Beat the egg whites with cream of tartar until a soft meringue forms.
  3. Gradually add the superfine sugar and continue beating until stiff peaks form.
  4. Place the meringue into a large mixing bowl.
  5. In the same mixing bowl, beat the egg yolks and 1 cup of powdered sugar until light yellow and creamy.
  6. Add the spices and mix for another minute.
  7. Fold the yolk mixture into the egg white mixture.
  8. In a clean mixing bowl, whip the cream with the remaining 1/4 cup powdered sugar until stiff peaks form.
  9. Gently fold the whipped cream into the egg mixture.
  10. Fill a mug with hot water and 1 ounce of rum.
  11. Top with a scoop of the egg mixture.
  12. Garnish with a sprinkle of nutmeg.
  13. Serve and enjoy!
