Ingredients

  • 3/4 cup milk
  • 2 tablespoons granulated sugar
  • 1-inch cinnamon stick
  • 1 whole clove
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon slivered almonds
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk, (whisked)
  • 1-2 oz dark rum, (for serving)

Instructions

  1. In a large pot, combine milk, sugar, cinnamon stick, clove, and ground nutmeg over medium heat. Whisk to combine.
  2. Bring to a simmer, whisking occasionally to prevent burning. Remove from heat.
  3. Transfer 1/2 cup of the sweetened milk mixture to a small bowl and add the slivered almonds. Allow to cool for 30 minutes.
  4. Remove and discard the cinnamon stick and clove from the milk mixture. If needed, strain to remove any small pieces.
  5. Blend the soaked almonds and the liquid until smooth, then add back to the pot along with vanilla extract. Whisk to combine.
  6. Slowly pour in the egg yolk, whisking constantly until fully incorporated.
  7. Place the pot over medium-low heat for 12-15 minutes, whisking every minute, until the mixture thickens to coat the back of a spoon.
  8. To serve warm, add rum and whisk to combine. Serve in mugs topped with a sprinkle of cinnamon.
  9. To serve cold, add rum and whisk to combine. Allow to cool for 1 hour, then refrigerate until chilled. Serve over ice topped with a sprinkle of cinnamon.
