Ingredients

  • 1 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1 whole clove
  • 3/4 large egg yolk (whisked)
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream
  • 1/4 cup half and half
  • 1/4 teaspoon vanilla extract
  • a pinch of nutmeg

Instructions

  1. In a saucepan over low heat, combine the milk, cinnamon, and cloves. Stir regularly for five minutes.
  2. Increase the heat to medium-low and bring the mixture to a boil while stirring, then remove it from the heat.
  3. In a mixing bowl, beat the egg yolks and sugar until the mixture reaches a cake batter-like consistency.
  4. Slowly add a small amount of the hot milk mixture to the egg and sugar mixture, whisking vigorously to prevent the eggs from cooking.
  5. Pour the combined mixture back into the saucepan and cook over medium heat, whisking consistently for three minutes until it thickens.
  6. Remove from the heat, strain to remove the cloves, and allow it to cool for one hour.
  7. Stir in the half and half, heavy cream, nutmeg, and vanilla, then transfer to a sealable container and refrigerate for at least 8 hours before serving.
  8. When serving, add rum or bourbon (optional), top with a sprinkle of cinnamon, and enjoy!
