Ingredients

  • 1 cup milk
  • 1/4 teaspoon cinnamon
  • 1 whole clove
  • 3 large egg yolks (whisked)
  • 2 tablespoons granulated sugar
  • 1/4 cup heavy cream
  • 1/4 cup half and half
  • 1/2 teaspoon vanilla extract
  • a pinch of nutmeg

Instructions

  1. In a saucepan over low heat, combine the milk, cinnamon, and clove. Stir for five minutes, then bring to a boil over medium-low heat.
  2. In a mixing bowl, beat the egg yolks and sugar until creamy.
  3. Slowly pour a small amount of the hot milk into the egg mixture while whisking vigorously to prevent the eggs from cooking.
  4. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens.
  5. Remove from heat, strain to remove the clove, and cool for one hour.
  6. Stir in the half and half, heavy cream, nutmeg, and vanilla.
  7. Transfer to a sealable container and refrigerate for at least 8 hours before serving.
  8. Add rum or bourbon (optional) when serving, top with cinnamon, and enjoy!
