Ingredients
- 1 cup milk
- 1/4 teaspoon cinnamon
- 1 whole clove
- 3 large egg yolks (whisked)
- 2 tablespoons granulated sugar
- 1/4 cup heavy cream
- 1/4 cup half and half
- 1/2 teaspoon vanilla extract
- a pinch of nutmeg
Instructions
- In a saucepan over low heat, combine the milk, cinnamon, and clove. Stir for five minutes, then bring to a boil over medium-low heat.
- In a mixing bowl, beat the egg yolks and sugar until creamy.
- Slowly pour a small amount of the hot milk into the egg mixture while whisking vigorously to prevent the eggs from cooking.
- Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens.
- Remove from heat, strain to remove the clove, and cool for one hour.
- Stir in the half and half, heavy cream, nutmeg, and vanilla.
- Transfer to a sealable container and refrigerate for at least 8 hours before serving.
