Ingredients

  • 1 large egg, separated
  • 2 teaspoons superfine sugar, divided
  • 1 ounce heavy cream
  • 1/2 teaspoon pure almond extract
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 ounces aged rum
  • Garnish: grated cinnamon
  • Garnish: grated nutmeg

Instructions

  1. Separate the egg into two bowls.
  2. Using a hand mixer, beat the egg yolk until creamy.
  3. In a separate bowl, beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Slowly fold the egg white and yolk together using a spoon.
  5. In another bowl, beat the cream with vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form. Add the rum and stir gently.
  6. Slowly fold the cream into the egg mixture.
  7. Serve immediately over ice, if desired, in a punch or martini glass.
  8. Garnish with grated nutmeg and cinnamon.
