Festive Pomegranate Spice Martini
A delightful twist on the classic Cosmopolitan, this Festive Pomegranate Spice Martini is a special holiday cocktail featuring fresh pomegranate juice and a Christmas-infused vodka.
Ingredients
- 1/4 fresh red chili
- 1/2 lime
- 1/2 clementine
- 1/2 lemon
- 1 cinnamon stick
- 3-4 cloves
- a few pink peppercorns
- 1 sprig of fresh rosemary
- 2 1/3 cups quality vodka
- 1/4 pomegranate
- 1 1/3 oz Christmas-infused vodka or quality vodka
- 1/3 oz triple sec
- 1/2 oz lime juice (optional)
- 1/2 orange, for serving (optional)
Instructions
- Begin by making the Christmas-infused vodka. Deseed the chili and use a speed-peeler to cut three strips of peel from the lime, clementine, and lemon. Place these peels along with the chili, cinnamon, cloves, peppercorns, and rosemary in a dry non-stick frying pan on medium heat. Toast for a couple of minutes until fragrant, then remove from heat and allow to cool slightly.
- Once the aromatics have cooled, place them into the bottle of vodka and allow to infuse for at least three days.
- To prepare the Festive Pomegranate Spice Martini, fill a cocktail shaker or jug with ice. Squeeze in the pomegranate juice (approximately 0.85 oz), then add the remaining ingredients (except the orange). Shake or stir well, then strain into a martini glass. Garnish with a strip of orange peel if desired.
