Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/8 - 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon vanilla extract
  • 2-3 tablespoons bourbon (optional)

Instructions

  1. Separate the egg yolk from the white. Place the yolk in a mixing bowl and set the white aside.
  2. Add sugar to the yolk and whisk until the mixture is pale yellow and fluffy. Set aside.
  3. In a saucepan, heat the milk, whipping cream, and nutmeg until it begins to steam. Remove from heat.
  4. Spoon a ladle of the hot milk mixture into the egg mixture and whisk. Continue adding ladles of the hot milk to the egg mixture.
  5. Slowly pour the egg mixture back into the saucepan, whisking as you do so.
  6. Heat the mixture over medium heat, stirring constantly until it thickens. Do not let it boil.
  7. Remove from heat and stir in the vanilla extract and bourbon.
  8. Cover with plastic wrap and refrigerate for at least 1 hour.
  9. Serve with a sprinkle of freshly grated nutmeg.
