Ingredients

  • 1/3 cup whole milk or 2%
  • 2 tbsp heavy cream
  • 1/8 tsp ground nutmeg
  • pinch of ground cinnamon
  • pinch of cloves
  • 1 egg yolk (room temperature)
  • 2 tbsp sugar
  • 1/8 tsp vanilla extract
  • whipped cream (optional)
  • extra ground cinnamon or nutmeg (optional)

Instructions

  1. In a medium saucepan, combine milk, cream, nutmeg, cinnamon, and cloves. Heat the mixture over medium/medium-low heat, whisking frequently until it is almost boiling.
  2. In a large bowl, whisk together egg yolk and sugar. Add the sugar gradually, whisking thoroughly after each addition.
  3. Gradually add about 1/3 cup of the hot milk mixture to the egg mixture, whisking thoroughly. Continue adding the hot mixture to the egg mixture in small increments, whisking thoroughly after each addition.
  4. Once most of the milk mixture has been incorporated into the egg mixture, return it to the saucepan. Cook, while whisking constantly, until the mixture reaches 160 degrees F and slightly thickens.
  5. Remove from heat and whisk in the vanilla. Serve with optional whipped cream and a light dusting of cinnamon or nutmeg.
