Festive Coconut Nog
A dairy-free twist on the classic holiday eggnog, this creamy and spiced Festive Coconut Nog is perfect for vegans and those with lactose intolerance. Add a splash of bourbon or rum for an extra festive kick!
Ingredients
- 1/2 cup non-dairy milk of choice
- 2 tbsp full-fat coconut milk
- 1 tsp maple syrup
- 1 tbsp brown sugar (or coconut sugar)
- a pinch of nutmeg
- a pinch of cardamom
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 oz bourbon or rum
- whipped cream
- a sprinkle of cinnamon
Instructions
- In a blender, combine the non-dairy milk, coconut milk, maple syrup, brown sugar, nutmeg, cardamom, cinnamon, and vanilla extract.
- Blend on high speed for 1-2 minutes until the mixture is smooth.
- Taste the nog and adjust the spices and sweetness as needed.
- Transfer the nog to a glass jar and refrigerate for up to 4 days.
- For a boozy option, add 1 ounce of bourbon or rum to the serving.
- Serve with a dollop of whipped cream and a sprinkle of cinnamon on top.
