Ingredients

  • 1 egg (separated into yolk and white)
  • 2 tablespoons superfine sugar
  • Pinch of salt
  • 1/3 teaspoon vanilla extract
  • 1/8 teaspoon grated nutmeg, plus more for garnish
  • 1/3 cup brandy
  • 2 tablespoons milk

Instructions

  1. Beat the egg yolk in a mixing bowl, then gradually add the superfine sugar, mixing until dissolved. Add the vanilla extract, nutmeg, and salt, and continue mixing until the mixture becomes thick and pale yellow.
  2. Slowly incorporate the brandy into the egg yolk mixture, followed by the milk, until well combined.
  3. Cover the mixture and chill in the refrigerator for at least an hour.
  4. Just before serving, whip the egg white to soft peaks. Gradually beat in some of the remaining superfine sugar, continuing to beat until soft peaks form again.
  5. Gently fold the whipped egg whites into the chilled egg yolk mixture.
  6. Serve the eggnog in a festive glass and sprinkle a touch of grated nutmeg on top for garnish.
