Ingredients

  • 1 tbsp granulated sugar
  • 1 egg (separated)
  • 1/3 cup milk
  • 2 tbsp heavy cream
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon
  • a pinch of ginger
  • 2 tbsp bourbon

Instructions

  1. Set aside 1 tbsp of the granulated sugar.
  2. Beat the egg yolk until it lightens in color, gradually adding the remaining sugar until dissolved.
  3. In a saucepan, bring the milk, heavy cream, nutmeg, cinnamon, and ginger to a boil over medium heat. Remove from heat.
  4. Add a ladle of the milk mixture at a time to the egg mixture, stirring to temper it, then return everything to the saucepan and cook until it reaches 160°F.
  5. Remove from heat, stir in the bourbon, and chill in the fridge for at least an hour.
  6. Beat the egg whites with the tbsp of sugar until stiff peaks form, then whisk into the chilled eggnog. Serve cold.
