Ingredients

  • 2 lychees, halved
  • 1 strawberry, hulled and quartered
  • 2-3 sprigs fresh mint, plus more for garnish
  • 1 1/2 oz lychee syrup (from canned lychees)
  • 1/2 oz simple syrup
  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1/8 tsp rose water
  • Soda water, for topping

Instructions

  1. In a highball glass, muddle lychee, strawberry, mint, and lychee syrup.
  2. Add the simple syrup, rum, lime juice, and rose water, then stir to combine.
  3. Fill the glass with crushed ice and top with soda water. Gently stir.
  4. Garnish with a sprig of fresh mint and serve.
