Ingredients

  • 1/2 cup whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • 1.50 large egg yolks
  • 2 tablespoons sugar
  • 1/4 cup heavy cream
  • Whipped cream
  • Ground cinnamon
  • Cinnamon stick or Star Anise
  • Alcohol (optional)

Instructions

  1. Separate the egg yolks from the whites, then set aside.
  2. In a small saucepan, mix the milk, cinnamon, nutmeg, and vanilla, bringing it to a simmer.
  3. In a medium mixing bowl, combine the egg yolks and sugar, whisking until they become pale in color.
  4. Slowly add a small amount of the heated milk mixture to the eggs, whisking constantly to temper the eggs. Continue until all the milk is incorporated.
  5. Return the mixture to the saucepan and cook over medium heat until slightly thickened and it coats the back of a spoon. Avoid boiling.
  6. Remove from heat and stir in the heavy cream.
  7. Chill the eggnog before serving.
  8. To serve, top with whipped cream, a sprinkle of ground cinnamon, and a cinnamon stick or star anise if desired. If adding alcohol, stir in 1 jigger or ounce, then mix well.
