Effervescent Citrus Fizz is a creamy and bubbly twist on the classic Aperol Spritz, with Aperol, fresh lemon juice, cane syrup, and egg white, topped with seltzer and garnished with a grapefruit twist.
Ingredients
- 2 oz Aperol
- 1 oz juice from about 1 lemon
- 0.50 oz St. Martinique Cane Sugar Syrup (see note)
- 1 egg white
- Seltzer
- Grapefruit twist
Instructions
- In a cocktail shaker, combine Aperol, lemon juice, cane syrup, and egg white.
- Shake vigorously for 15 seconds to emulsify the egg white.
- Add ice to the shaker and shake until the mixture is very cold, about 15 seconds.
- Strain the mixture into a small juice glass.
- Top the glass with seltzer and garnish with a twist of grapefruit.
