Effervescent Citrus Fizz is a creamy and bubbly twist on the classic Aperol Spritz, with Aperol, fresh lemon juice, cane syrup, and egg white, topped with seltzer and garnished with a grapefruit twist.

Ingredients

  • 2 oz Aperol
  • 1 oz juice from about 1 lemon
  • 0.50 oz St. Martinique Cane Sugar Syrup (see note)
  • 1 egg white
  • Seltzer
  • Grapefruit twist

Instructions

  1. In a cocktail shaker, combine Aperol, lemon juice, cane syrup, and egg white.
  2. Shake vigorously for 15 seconds to emulsify the egg white.
  3. Add ice to the shaker and shake until the mixture is very cold, about 15 seconds.
  4. Strain the mixture into a small juice glass.
  5. Top the glass with seltzer and garnish with a twist of grapefruit.
