Ingredients

  • 2 oz. Sipsmith VJOP London Dry Gin
  • 1/2 oz. Edith Grey simple syrup
  • 3/4 oz. lemon juice
  • 1 lavender-infused egg white
  • Schramsberg Blanc de Blanc
  • Agave syrup
  • Edith Grey tea
  • 1 part Big Heart Tea Co. Edith Grey hot tea
  • 1 part white sugar
  • 1 egg
  • Dried lavender buds

Instructions

  1. Place a whole egg in a sealed container on a bed of dried lavender buds, and refrigerate for 2-3 days to create lavender-infused egg whites.
  2. Brew Big Heart Tea Co. Edith Grey hot tea according to package instructions, then combine with equal parts sugar to create the Edith Grey simple syrup. Stir until clear and let cool.
  3. In a shaker, combine the gin, Edith Grey simple syrup, lemon juice, and lavender-infused egg white.
  4. Dry shake the ingredients, then add ice and shake for at least 30 seconds.
  5. Strain the mixture into a glass and top with Schramsberg Blanc de Blanc.
  6. Garnish the glass with a stripe of agave syrup and Edith Grey tea on the condensation along the outside.
