Ingredients

  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1/3 cup chilled milk
  • 2 tablespoons chilled heavy cream
  • 1/2 ounce bourbon (optional, or replace with an additional 2 tablespoons of heavy cream for a non-alcoholic version)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh or ground nutmeg for serving

Instructions

  1. Separate the egg and add the yolk to a medium-sized bowl. Whisk in sugar until the mixture is light, fluffy, and a buttery yellow color.
  2. In a medium-sized pot over medium heat, warm the milk and heavy cream until just about to boil. Remove from heat.
  3. Quickly whisk a tablespoon of warm milk into the egg mixture to temper. Repeat the process two more times until the eggs are at temperature. Then, whisk the egg mixture into the pot of milk and combine.
  4. Stir in the bourbon (if using), vanilla, and salt, then serve.
  5. In a separate bowl, add the remaining egg white and 1/2 tablespoon of sugar. Beat until stiff peaks form.
  6. Pour the eggnog into glasses, spoon the meringue on top, sprinkle with nutmeg, and serve.
