Ingredients

  • 1 large egg
  • 3/4 cup whole milk
  • 1/4 cup heavy cream
  • 1 cinnamon stick
  • 1/2 teaspoon good vanilla extract
  • Pinch of grated nutmeg, plus more for garnish
  • 2 1/2 tablespoons granulated sugar
  • Bourbon to taste (optional)

Instructions

  1. To pasteurize the egg, place it in a pan, cover with cool water, and heat slowly until it reaches 138degF/60degC. Maintain this temperature for 3 minutes, then cool in ice water.
  2. Separate the egg yolk and egg white into separate bowls.
  3. In a saucepan, combine milk, cream, cinnamon stick, vanilla, and nutmeg. Simmer until the temperature reaches 160degF/72degC.
  4. In a bowl, beat the egg yolk and sugar until smooth, then add to the pan and bring the temperature back up to 160degF/72degC.
  5. Remove the cinnamon stick, stir in the bourbon if using, and refrigerate until cool.
  6. In a separate bowl, beat the egg white until stiff peaks form. Fold the egg white into the cooled mixture.
  7. Serve topped with grated nutmeg and a splash of bourbon (optional).
