Ingredients

  • 1 egg yolk
  • 2 tbsp granulated sugar, divided
  • 1/3 cup whole milk
  • 2 tbsp heavy cream
  • 1/8 tsp cinnamon
  • pinch each of allspice and cloves (plus extra pinch if needed)
  • 2 tbsp bourbon
  • whipped cream (for topping)

Instructions

  1. In a medium bowl, whisk together the egg yolk and 1 tablespoon of sugar until light.
  2. In a large saucepan, heat the milk, cream, 1 tablespoon of sugar, and the spices over medium heat until steaming, about 5 minutes. Remove from heat.
  3. While whisking the egg yolk, slowly add some of the steaming milk, starting with a few drops and then pouring in a thin stream while whisking.
  4. Once about 1 cup of milk is added to the eggs, pour the egg mixture back into the saucepan while whisking constantly.
  5. Stir in the bourbon and heat on low until the eggnog is hot and thick, about 5 minutes.
  6. Ladle the eggnog into a glass and top with whipped cream and a sprinkle of cinnamon.
