Ingredients
- 1 egg yolk
- 2 tbsp granulated sugar, divided
- 1/3 cup whole milk
- 2 tbsp heavy cream
- 1/8 tsp cinnamon
- pinch each of allspice and cloves (plus extra pinch if needed)
- 2 tbsp bourbon
- whipped cream (for topping)
Instructions
- In a medium bowl, whisk together the egg yolk and 1 tablespoon of sugar until light.
- In a large saucepan, heat the milk, cream, 1 tablespoon of sugar, and the spices over medium heat until steaming, about 5 minutes. Remove from heat.
- While whisking the egg yolk, slowly add some of the steaming milk, starting with a few drops and then pouring in a thin stream while whisking.
- Once about 1 cup of milk is added to the eggs, pour the egg mixture back into the saucepan while whisking constantly.
- Stir in the bourbon and heat on low until the eggnog is hot and thick, about 5 minutes.
- Ladle the eggnog into a glass and top with whipped cream and a sprinkle of cinnamon.
