Ingredients
- 2/3 cup coconut milk
- 1 tablespoon granulated sugar
- 1/8 teaspoon vanilla extract
- 1 large egg yolk
- 1/8 teaspoon ground cinnamon
- Pinch of ground nutmeg
- 1 tablespoon hazelnut liqueur
- 1 egg white (optional)
- 1 teaspoon sweetened flaked coconut (for garnish, optional)
- 1/2 teaspoon cinnamon sugar (for garnish, optional)
Instructions
- In a medium saucepan, heat the coconut milk, half of the sugar, and vanilla over medium-low heat until it starts to steam and gently simmer.
- In a separate bowl, whisk the remaining sugar into the egg yolk until pale and smooth.
- Slowly pour a small amount of the warm coconut milk into the egg yolk while whisking continuously, then transfer the mixture back into the saucepan.
- Add the cinnamon and nutmeg to the mixture and cook over medium-low heat until it thickens slightly.
- Stir in the hazelnut liqueur, then cool the eggnog in an ice bath and refrigerate for at least 2 hours.
- Optional: Beat the egg white with a little sugar until frothy, then fold it into the chilled eggnog.
- Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
