Ingredients

  • 2/3 cup coconut milk
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/8 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 tablespoon hazelnut liqueur
  • 1 egg white (optional)
  • 1 teaspoon sweetened flaked coconut (for garnish, optional)
  • 1/2 teaspoon cinnamon sugar (for garnish, optional)

Instructions

  1. In a medium saucepan, heat the coconut milk, half of the sugar, and vanilla over medium-low heat until it starts to steam and gently simmer.
  2. In a separate bowl, whisk the remaining sugar into the egg yolk until pale and smooth.
  3. Slowly pour a small amount of the warm coconut milk into the egg yolk while whisking continuously, then transfer the mixture back into the saucepan.
  4. Add the cinnamon and nutmeg to the mixture and cook over medium-low heat until it thickens slightly.
  5. Stir in the hazelnut liqueur, then cool the eggnog in an ice bath and refrigerate for at least 2 hours.
  6. Optional: Beat the egg white with a little sugar until frothy, then fold it into the chilled eggnog.
  7. Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
