Ingredients

  • 3.50 fl. oz. full-fat coconut milk
  • 1.50 organic egg yolks
  • 1/4 tsp vanilla extract
  • 1 tbsp organic maple syrup OR 1 tbsp Swerve granular sugar replacement
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • a pinch of ground cloves
  • Rum or Brandy (optional - add a splash to individual servings)

Instructions

  1. Separate the egg yolks from the whites and set the whites aside for later use.
  2. In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
  3. Pour the mixture into a saucepan and heat over medium heat, stirring often, until the eggnog begins to thicken. Do not allow it to boil.
  4. Once the eggnog has thickened, remove it from the heat and pour it into a glass container.
  5. Chill the eggnog in the refrigerator overnight.
  6. When ready to serve, add a splash of rum or brandy to individual servings if desired.
