Ingredients
- 3.50 fl. oz. full-fat coconut milk
- 1.50 organic egg yolks
- 1/4 tsp vanilla extract
- 1 tbsp organic maple syrup OR 1 tbsp Swerve granular sugar replacement
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- a pinch of ground cloves
- Rum or Brandy (optional - add a splash to individual servings)
Instructions
- Separate the egg yolks from the whites and set the whites aside for later use.
- In a high-speed blender, combine the coconut milk, egg yolks, vanilla extract, sweetener, and spices. Blend until smooth.
- Pour the mixture into a saucepan and heat over medium heat, stirring often, until the eggnog begins to thicken. Do not allow it to boil.
- Once the eggnog has thickened, remove it from the heat and pour it into a glass container.
- Chill the eggnog in the refrigerator overnight.
- When ready to serve, add a splash of rum or brandy to individual servings if desired.
