Ingredients

  • 2/3 cup coconut milk
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/8 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 tablespoon hazelnut liqueur
  • 1 large egg white (optional)
  • 2 teaspoons sweetened flaked coconut (for garnish, optional)
  • 1/2 teaspoon cinnamon sugar (for garnish, optional)

Instructions

  1. Prepare an ice bath and set it aside.
  2. In a medium saucepan, heat the coconut milk, granulated sugar, and vanilla over medium low heat until the sugar is fully dissolved and the milk begins to steam.
  3. Whisk the egg yolk with the remaining sugar until pale and smooth.
  4. Slowly pour a small amount of the heated coconut milk into the egg yolk mixture, whisking constantly.
  5. Transfer the egg yolk mixture back into the saucepan and add cinnamon and nutmeg. Stir constantly over medium low heat until the mixture thickens.
  6. Stir in the hazelnut liqueur.
  7. Place the saucepan in the prepared ice bath and stir as the eggnog cools. Refrigerate for at least 2 hours or overnight.
  8. If using egg white, beat it with a small amount of sugar until frothy and gently fold it into the cooled eggnog.
  9. Serve the cocktail garnished with flaked coconut and a sprinkle of cinnamon sugar.
