Ingredients
- 2/3 cup coconut milk
- 1 tablespoon granulated sugar
- 1/8 teaspoon vanilla extract
- 1 large egg yolk
- 1/8 teaspoon ground cinnamon
- Pinch of ground nutmeg
- 1 tablespoon hazelnut liqueur
- 1 large egg white (optional)
- 2 teaspoons sweetened flaked coconut (for garnish, optional)
- 1/2 teaspoon cinnamon sugar (for garnish, optional)
Instructions
- Prepare an ice bath and set it aside.
- In a medium saucepan, heat the coconut milk, granulated sugar, and vanilla over medium low heat until the sugar is fully dissolved and the milk begins to steam.
- Whisk the egg yolk with the remaining sugar until pale and smooth.
- Slowly pour a small amount of the heated coconut milk into the egg yolk mixture, whisking constantly.
- Transfer the egg yolk mixture back into the saucepan and add cinnamon and nutmeg. Stir constantly over medium low heat until the mixture thickens.
- Stir in the hazelnut liqueur.
- Place the saucepan in the prepared ice bath and stir as the eggnog cools. Refrigerate for at least 2 hours or overnight.
- If using egg white, beat it with a small amount of sugar until frothy and gently fold it into the cooled eggnog.
- Serve the cocktail garnished with flaked coconut and a sprinkle of cinnamon sugar.
