Clear and Creamy Piña

A unique and visually stunning cocktail that combines mezcal, tequila, pineapple juice, lemon juice, orgeat syrup, and heavy cream, resulting in a beautifully clear and creamy libation.

Ingredients

  • 1.50 oz Mezcal
  • 2 oz Blanco Tequila
  • 1 oz Pineapple Juice
  • 0.50 oz Freshly squeezed Lemon Juice
  • 0.50 oz Orgeat Syrup
  • 0.75 oz Heavy Cream
  • 1 Sage leaf (For Garnish)

Instructions

  1. In a mixing glass, combine all ingredients except the heavy cream and stir.
  2. In a separate container, pour the heavy cream slowly, then add the cocktail mixture without stirring.
  3. Cover and refrigerate for 30 minutes to 24 hours.
  4. Place a coffee filter in a fine mesh sieve over a bowl and pour the cocktail mixture through the filter.
  5. Serve over 1 large ice cube and garnish with sage. The clarified cocktail can be stored in the fridge for up to 2 weeks.
