Citrus Zest Radler

Ingredients
- 6 oz IPA (with or without alcohol)
- 6 oz lemon soda, such as Spindrift
- 2 oz blood orange juice
- 1 oz meyer lemon juice
- 1 oz Ghia non-alcoholic aperitif
- 1 oz citrus-infused honey
- 0.50 oz Food52 wood-aged sweet white vinegar with thyme
- 2 blood oranges
- 2 meyer lemons
- 1/3 cup honey
Instructions
- In a glass, combine blood orange juice, lemon juice, Ghia, citrus-infused honey, and vinegar. Stir quickly to dissolve the honey.
- Pour 6 ounces each of the beer and lemon soda into two large glasses or beer steins.
- Divide the honey-juice-vinegar-Ghia mixture evenly between the two glasses (approximately 2 1/2 ounces each).
- Gently stir to combine.
- Garnish with a half-wheel of blood orange perched on the rim of the glass and dusted with pink flake salt.
- To make the infused honey, zest oranges and lemons into a small container. Pour honey over the top and leave, covered, on the countertop for 5 hours. Then strain out solids using a tea strainer or sieve. Use immediately or store in the refrigerator for up to one month.
