Ingredients
- 2 cups water
- 1/4 cup sugar
- 1 star anise clove
- 1/2 tsp vanilla extract
- 3-4 fresh mint leaves
- 1/4 cup pitted red cherries, chopped
- 1 black tea bag
- 1 tbsp lemon juice
- ice cubes
- mint leaves for garnish
Instructions
- Begin by preparing the cherry mixture. In a saucepan, combine 1 cup of water, chopped cherries, lemon juice, mint leaves, star anise, and vanilla extract. Bring to a boil, then reduce the heat and simmer for 15 minutes, mashing the cherries as they cook. Once done, allow the mixture to cool and strain it.
- In the same saucepan, combine the remaining 1 cup of water and sugar. Bring to a boil, stirring until the sugar dissolves. Remove from heat, add the tea bag, and steep for 10 minutes. Discard the tea bag and let the mixture cool to room temperature.
- Fill a pitcher with ice cubes and pour in the cooled tea. Stir in the cherry juice mixture, then garnish with mint leaves and enjoy!
