Ingredients

  • 2 cups water
  • 1/4 cup sugar
  • 1 star anise clove
  • 1/2 tsp vanilla extract
  • 3-4 fresh mint leaves
  • 1/4 cup pitted red cherries, chopped
  • 1 black tea bag
  • 1 tbsp lemon juice
  • ice cubes
  • mint leaves for garnish

Instructions

  1. Begin by preparing the cherry mixture. In a saucepan, combine 1 cup of water, chopped cherries, lemon juice, mint leaves, star anise, and vanilla extract. Bring to a boil, then reduce the heat and simmer for 15 minutes, mashing the cherries as they cook. Once done, allow the mixture to cool and strain it.
  2. In the same saucepan, combine the remaining 1 cup of water and sugar. Bring to a boil, stirring until the sugar dissolves. Remove from heat, add the tea bag, and steep for 10 minutes. Discard the tea bag and let the mixture cool to room temperature.
  3. Fill a pitcher with ice cubes and pour in the cooled tea. Stir in the cherry juice mixture, then garnish with mint leaves and enjoy!
