Ingredients

  • 4 oz Carpano Antica Sweet Vermouth
  • 20 whole coffee beans
  • 1 oz Cognac VSOP
  • 1/2 oz aged rum (such as Ron Zacapa 23 Year)
  • 3/4 oz coffee-infused Carpano Antica sweet vermouth
  • 1/2 oz Creme de Cacao
  • 1/2 oz heavy whipping cream
  • 1/4 tsp demerara sugar
  • 1 very fresh egg
  • 2 dashes Angostura bitters
  • Chocolate shavings (optional, for garnish)

Instructions

  1. Place coffee beans in a glass jar and pour Carpano Antica over the beans. Seal the jar and let it infuse at room temperature for 30 minutes. Taste and infuse for up to 5 1/2 hours more if a stronger flavor is desired, checking periodically.
  2. In a cocktail shaker, combine cognac, aged rum, 3/4 oz of coffee-infused Carpano Antica sweet vermouth, creme de cacao, cream, sugar, bitters, and egg. Dry shake (without ice) for 15 seconds to emulsify.
  3. Add ice to the cocktail shaker and shake for 15 seconds until well chilled.
  4. Strain the mixture into an ice-filled highball glass. Optionally, garnish with chocolate shavings.
