Ingredients

  • 3/4 cup water
  • 3 oz cream soda
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter
  • 1 tablespoon butterscotch syrup
  • 1 cinnamon stick
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup spiced rum
  • Whipped cream
  • Gold sanding sugar

Instructions

  1. In a slow cooker, combine water, cream soda, brown sugar, butter, 1 tablespoon of butterscotch syrup, cinnamon stick, vanilla extract, and a pinch of salt.
  2. Cover and cook on low for 3 to 3 1/2 hours, until the mixture is warm and the butter is melted.
  3. Remove the lid and stir in the spiced rum.
  4. Pour the remaining butterscotch syrup onto a shallow plate.
  5. Dip the rim of a mug in the syrup before filling it with the butterbeer mixture.
  6. Top with whipped cream and sprinkle with gold sanding sugar.
  7. Serve and enjoy.
