Ingredients

  • 1/2 cup honey (or white granulated sugar)
  • 1/2 cup water
  • 4 oz strawberries, stem removed and chopped
  • 4 oz kiwi fruit, peeled and chopped
  • Ice
  • 1.50 oz gin
  • 1.50 oz strawberry kiwi syrup
  • 4 oz tonic water
  • Fresh strawberries, kiwi, or limes to garnish

Instructions

  1. In a medium-sized saucepan, combine honey (or sugar), water, strawberries, and kiwi.
  2. Bring to a boil over high heat, then reduce the temperature to maintain a gentle simmer.
  3. Let simmer for 20 minutes, stirring occasionally until the fruit is broken down and the strawberries are less vibrant.
  4. Pour the syrup through a fine mesh strainer to remove the fruit solids. Discard the fruit and transfer the syrup to another container to cool.
  5. Fill a tumbler glass with ice, pour in the gin, followed by the simple syrup, and top up with tonic water.
  6. Garnish with extra fruit if desired and enjoy.
