Ingredients
- 1/2 cup honey (or white granulated sugar)
- 1/2 cup water
- 4 oz strawberries, stem removed and chopped
- 4 oz kiwi fruit, peeled and chopped
- Ice
- 1.50 oz gin
- 1.50 oz strawberry kiwi syrup
- 4 oz tonic water
- Fresh strawberries, kiwi, or limes to garnish
Instructions
- In a medium-sized saucepan, combine honey (or sugar), water, strawberries, and kiwi.
- Bring to a boil over high heat, then reduce the temperature to maintain a gentle simmer.
- Let simmer for 20 minutes, stirring occasionally until the fruit is broken down and the strawberries are less vibrant.
- Pour the syrup through a fine mesh strainer to remove the fruit solids. Discard the fruit and transfer the syrup to another container to cool.
- Fill a tumbler glass with ice, pour in the gin, followed by the simple syrup, and top up with tonic water.
- Garnish with extra fruit if desired and enjoy.
