Ingredients
- 8 oz kombucha
- 1/4 cup fresh blueberries
- 1 tbsp organic sugar
- 1 tbsp water
- 6-8 fresh mint leaves
- Squeeze of fresh lime juice
- Fresh blueberries, mint, and lime wedges for garnish
- Ice
Instructions
- In a small saucepan, combine the sugar, blueberries, water, and mint, and bring to a boil over medium heat.
- Use a fork to gently smash the blueberries, then reduce the heat and let it simmer for another 5 minutes.
- Remove the saucepan from the heat and allow the mixture to cool to room temperature.
- Transfer the mixture to a bowl or glass and refrigerate to speed up the cooling process.
- Combine the blueberry mixture with the kombucha in a large jar or container, and stir well.
- Pour the mixture into separate kombucha bottles, distributing the pulp evenly amongst each.
- Seal the bottles tightly and place them in a dark, warm place for 2-4 days for secondary fermentation.
- Refrigerate for at least 24 hours before serving. For a fizzier drink, wait at least one week before drinking.
- When ready to serve, strain the mixture using a fine mesh strainer to remove the pulp and SCOBY.
- Pour into a glass with ice, add a squeeze of fresh lime juice, and garnish with fresh blueberries and mint. Enjoy!
