Ingredients

  • 1 tsp lavender syrup
  • 2 oz gin
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 tbsp water
  • 1 tbsp fresh mint
  • 1/2 lemon
  • Ice
  • 16 oz soda water (or tonic water)

Instructions

  1. In a saucepan, simmer the blueberries and water over medium heat for 5 minutes until broken down.
  2. Mash the blueberry mixture or blend in a blender, then allow it to cool.
  3. Slice the lemon in half and reserve two slices for decoration.
  4. Roughly chop the mint.
  5. In a glass, combine the mint, blueberry puree, lavender syrup, gin, and a squeeze of lemon juice. Mix well.
  6. Add ice to the glass and top up with soda water. Stir gently to combine the blueberry mixture at the bottom.
  7. Serve with a slice of lemon and additional mint.
