Ingredients
- 1 cup mixed berries (2 oz blueberries, 3 oz raspberries, 3 oz blackberries)
- 1/4 cup filtered water
- 1/4 cup raw cane sugar
- 1/2 tbsp freshly squeezed lemon juice (equivalent to 1/4 of a large lemon)
- Fruit compote, to taste
- 2 large scoops dairy-free vanilla ice cream (or vanilla ice cream of choice)
- 1 - 1 1/2 oz Empress 1908 Gin
- Optional: Coconut whipped topping or whipped cream, for topping
- 2 tbsp club soda
Instructions
- Prepare the fruit compote: In a small saucepan, combine the sugar, water, mixed berries, and lemon juice. Stir well.
- Simmer: Heat the mixture over medium-high heat until it boils, then reduce the heat to medium-low and simmer gently for 10-15 minutes until it thickens.
- Let cool: Remove the compote from the heat and let it cool slightly.
- Assemble the ice cream shake: In a glass, add a couple of tablespoons of the fruit compote at the bottom.
- Blend: In a blender, combine the club soda and ice cream, blend until smooth. Add the Empress Gin and some additional compote, and blend until just combined.
- Divide: Pour the Mixed-Berry Ice Cream Shake into the glass.
- Optional: Top with coconut whipped cream. Enjoy immediately!
