- 1/4 cup frozen raspberries
- 4-5 fresh strawberries, hulled and sliced
- 1 tbsp sugar
- 1 tsp honey
- 2 tbsp half and half
- 1/4 tsp vanilla extract

- Add sugar and honey to sweeten the berries, stirring until dissolved.
- Remove from heat and puree the berries in a blender.
- Strain the berry puree through a fine mesh strainer into a measuring cup, tapping the strainer gently to extract the liquid.
- Save the remaining seeds for texture, if desired.
- Slowly pour half and half through the strainer to extract more juice from the berries, then stir to combine.
- Add vanilla extract and stir the mixture.
- Pour the berry mixture into an ice cube tray and freeze.
- When ready to serve, place berry cubes in a champagne glass and pour champagne over the cubes. The cubes will melt, creating a delicious mimosa.
