Ingredients

  • 3 oz sparkling champagne
  • 1/4 cup frozen raspberries
  • 4-5 fresh strawberries, hulled and sliced
  • 1 tbsp sugar
  • 1 tsp honey
  • 2 tbsp half and half
  • 1/4 tsp vanilla extract

Instructions

  1. In a medium saucepan, combine the raspberries and strawberries and cook over medium-low heat until softened and soupy, about 8-10 minutes.
  2. Add sugar and honey to sweeten the berries, stirring until dissolved.
  3. Remove from heat and puree the berries in a blender.
  4. Strain the berry puree through a fine mesh strainer into a measuring cup, tapping the strainer gently to extract the liquid.
  5. Save the remaining seeds for texture, if desired.
  6. Slowly pour half and half through the strainer to extract more juice from the berries, then stir to combine.
  7. Add vanilla extract and stir the mixture.
  8. Pour the berry mixture into an ice cube tray and freeze.
  9. When ready to serve, place berry cubes in a champagne glass and pour champagne over the cubes. The cubes will melt, creating a delicious mimosa.
